It took a lot of detective work, but I was able to figure out the North Hollywood streets that the big chase scene took place on!
Bookending the chase with a couple of additional tidbits. Here is a poster of Libertad Lamarque, appearing at the Million Dollar Theater in Los Angeles. Libertad Lamarque was a popular movie star in Mexico and Argentina from the 1940s until her death in 2000, when she was still appearing in a Mexican soap opera at the age of 92. El Carne Propia was a Mexican movie that came out in 1961. She also performed at the Million Dollar Theater in Los Angeles.
On to the chase scene! There were four different street signs barely visible in the film, which I eventually figured out were Sarah Street, the main road used in the scene, and side streets Lemp, Beck and Camilla Avenues. The scene opens with the CONTROL loaner car, a Citroen, turning right off of Camilla onto Sarah. This corner shows up a few times in the scene, and in a much later shot the Camilla street sign is visible.
Here is the same corner today. The houses are the same, though they have undergone some mild remodeling.
I'm not totally sure about this shot, but I believe the white van in the background is parked around the corner of Irvine Avenue, looking west from Lemp Avenue. That would put Walter Reed Junior High School on the right.
Not totally sure about this one either, it might be Irvine Avenue.
Here is the corner of Irvine and Sarah today.
In this shot we see the van again, further away. The School Xing sign is what makes me think this must be near the junior high school. There is no school xing sign today.
Here we pass the street sign for Lemp Avenue.

The clearest shot of a sign that we get in the scene is this one of Beck Avenue, which was the key to figuring out the rest.
The fence still takes that detour around the electrical box today.
This shot looks to be from Camilla, with the Citroen turning off of Sarah. Once I realized it was Sarah Street, it was clear that was what the street sign said.

I like being able to match it up to a real spot today.
The elevated road in the background (you can see a truck going by here) is the Ventura Freeway.
The wedding hall is a different location entirely. I don't know where this is.
The stunt scene with the big construction vehicle passing over the car and almost decapitating Max was done on a set. However, some shots in that scene were on real residential streets. A lot of the houses are gone but I was able to pinpoint one, and possibly two locations. (I also like the sign on the car - CONTROL Courtesy Car)
The brick border around the lawn was a unique feature, and on Google Maps I looked down Lemp, Beck and Cornelia to see if I could find it. I found a match on Beck, at the corner of Beck and Landale Street. The hydrant is still there, though it can't be seen from this angle.
A little later on they pass a couple of boys sitting on the hood of a car.
This house on Beck, the next to last house before Sarah, certainly looks very similar. It is possible there were other houses that looked the same that have since been remodeled or replaced.
The last shot, here, is the one that confirmed that the first shot was on the corner of Camilla.
The street where they park looks like a similar location, but there are no two-story buildings off of this stretch of Sarah, so I think this is likely somewhere else. Possibly a set, though it looks pretty busy.
Ending the episode with the wedding scene . . .
